Lately I have been trying to eat super clean and healthy , I wanted something to make my protein and veg a bit more interesting so I said I would make a stab at making a basic tomato sauce to serve with my chicken, turkey, fish or whatever I was having for dinner. So here it goes.
- 6 large tomatoes on the vine.
- 3 large cloves of garlic
- hand full od Basil
- 1 large red onion
- Tea spoon of Chilli Flakes
- Tea Spoon of Balsamic Glaze
- Table spoon of Olive oil
Firstly I put all the tomatoes , garlic and basil on a tray , poor over the balsamic glaze and the olive oil like below.
While the tomatoes are in the oven , sweat the onions in a saucepan.
Then once the skin of tomatoes are starting to split like below take them out of the oven.(This is usually after around 20 mins)
Then add the contents of the oven tray into the saucepan with onions, put on a low heat, add the chilli flakes and leave reduce.
Once it has reduced use a hand blender to further smooth out the sauce and then its all done!
This makes a good sized batch as you can see so leave it in the fridge for a few days or freeze it!
This is so much better than anything from a jar. All the ingredients are really good for you and it is so yummy with fish or anything to spice up your boring healthy dins! 🙂
