For the last few weeks I have really been trying to stay away from refined sugar. My obsession with chocolate needed to end , not just for my waist line but for my skin and general well being. Last week I was seriously craving the bad stuff … like an addict looking for her next fix! 🙂 So I did a bit of research on sugar free baking ideas and came up with this recipe.
Warning: While this recipe is sugar free it’s not entirely guilt free so don’t go eating 6 of them! 🙂
- 3 large bananas
- 1/4 cup of honey
- 1 Tsp of vanilla extract
- 1/3 cup of greek yoghurt
- 1/3 cup coconut oil
- 1 egg
- 2 tbsp cacao powder
- 1 1/3 cup of flour – I used oatmeal flour
- 1 tsp baking soda
- pinch of sea salt
- Mix the wet ingredients ( Bananas, honey , vanilla , yoghurt , oil, egg ) together with either a fork or a hand blender .
- Then add in the dry ingredients using a spatula until totally combined.
- Line muffin tin with cupcake liners and then add approx a heaped tablespoon to each cup.
- Bake for 15-17 minutes
